Oxidized Omega-3 Oils Boost Egg Nutrition but May Stress the Liver in Quail Study

This study looked at what happens when laying quail are fed oils rich in omega-3 fatty acids that have gone through natural oxidation (a process that happens when fats are exposed to air, light, or time). Researchers compared fresh sunflower oil to naturally oxidized chia, flaxseed, and salmon oils in the diets of 160 Japanese quail over six weeks.

Egg production and feed efficiency stayed about the same across groups, but the flaxseed oil group ate less feed, and both the flaxseed and salmon oil groups produced slightly smaller eggs. Eggs from quail fed oxidized chia and flaxseed oils had notably higher omega-3 content and a better omega-3 to omega-6 ratio in the yolk compared to the control group.

However, liver tissue examinations showed that quail fed any of the oxidized oils developed changes in liver structure, mainly fatty buildup (steatosis), which was not seen in the control group. The severity of these liver changes varied depending on which oil was used.

What this means for you

This is an animal (quail) study, not a human trial, so it can’t tell us directly how oxidized omega-3 oils affect people. It does highlight an important general principle: the quality and freshness of omega-3 oils matters, since oxidized fats may carry different benefits and risks than fresh, well-preserved ones.
